Ultimate Yang dish for coldest weather
it's been so cold!!
i hope the polar bear in central park zoo is, at least, happy.
this extreme yin condition, eat as much in "yang" way" as possible to keep yourself warm.
my easy, healthy recipe is here.
mixed winter vegetables soup with soba--or udon--- noodle
cook whole wheat udon noodle or soba ---soba is more yang, also has more protein.
drain and set aside.
cut all the vegetables for bite size, such as gobo, kabocha pumpkin, lotus root, daikon radish, chinese cabbage, carrot, japanese turnips, nagaimo taro and ginger. --- you can add scallion if you like. if the tops comes with daikon and carrot, please use them, too.
boil dashi soup ----with dried kombu seaweed and dried shiitake mushroom.
add all the vegetables, from hard to soft, and simmer till tender.
add miso paste to taste --- or salt & soy sauce
serve noodle and soup with all the vegetables---with wakame seaweed, optional-- in a big bowl, and enjoy!
this kind of dish is very popular this season in japan, and keeps you warm from inside.
also nutritionally well balanced, so with or without brown rice, it's a perfect meal.
easy and healthy!
* i'll upload a pic later.
