Beet and corn coleslaw



shred beet and carrot in food processor, or just grate them.
slice thin diagonally celery.
mix all with pinch of sea salt, let it sit.
remove excess liquid from the veggies, add ume vinegar or/and veggie mayo.
top with cooked corn.
very colorful and summery : )

brown rice Paella



made Paella with leftover brown rice.
saute whatever veggies you have in the fridge, add leftover rice, and add water or vegetable stock and cook.
season with miso and/or soy sauce.
add pinch of turmeric and cumin if you like.
i put sauted scallop on top, then bake for about 10min in the oven.
love it!!!

Strawberry Kanten


Using kanten (type of seaweed) as gelatin, you can make super easy and delicious dessert.
one cup of apple juice with 1 tbs of kanten together, and cook till all dissolve.
pour over sliced strawberry in a glass container.
let it cool, then keep in the fridge for at least a few hours.
perfect jello for summer!

Summer pressed salad




Easy, refreshing pressed salad with summer veggies.
thin slice all veggies and toss with pinch of sea salt, let it sit.
then squeeze all liquid (amazing how much water comes out!)
this process helps make it more digestible than raw salad, and also kills some germs.
then sprinkle ume vinegar (or mix with vegan mayo), add roasted sesame or sunflower seeds.
great summery dish : )

Steamed veggies with sweet miso dressing



don't even want to be in the kitchen when its too hot!
quick steam vegetables is what i do.
cut whatever, and steam all in one.
just sea salt or ume vinegar is fine, but i just quickly cook miso and amasake to make sweet miso dressing : )

Barley salad



punishing hot weather, i had no appetite for pressure cooked brown rice.
a day like that, i make barley salad.
simple dressing is ume vinegar, soy sauce, and lemon juice.
whatever vegetable, i kneed with sea salt first, and add to the salad.
sprinkle roasted nori seaweed and sesame, nice summer whole grain dish : )

Rice Balls



Typical Japanese snack, rice balls or Onigiri(Omusubi)
This is my travel food, which i always bring with me when i air travel.
Also good to make with leftover brown rice, and eat as snack : )
Mixed with ume vinegar and wrapped in nori seaweed.
Healthy, nutritious, and delicious!

Corn, hijiki and chive pancakes




Organic corn, hijiki seaweed, and chive with whole wheat.
Great with soy-brown rice vinegar dipping sauce : )

Strawberry season!





after a long year, finally this season!
I try to eat things only in season (some exception, of course), so i eat strawberry only from May to july.
after they disappear from union square market, i just wait patiently until the next season.
and it's worth it!
i appreciate this nature's gift more than ever : )

first one is a salad with arugula, which is also appear at the market.
next is pudding, with amazake, rice milk, kuzu root and kanten flake.
the last one is coconut strawberry panna cotta, with coconut milk, tofu, maple syrup.
