Typical meal 3



main grain is a mix of brown rice and millet. miso soup has leftover cooked chick pea and udon noodle with some veggies.
also I got nice mustard green, so I quickly blanched and had them with tahini-soy dressing.
turned out to be such a feast!
maybe a bit too much for tuesday evening?

Tofu burger



with miso-apple sauce, and topping is nori powder : )

Instead of using ground meat, I put soaked dried tofu in food processor, and cooked down with dashi stock,soy sauce and mirin to make soboro .
you can eat this with rice, or cook with vegetables like I did.
this time, I stewed soboro with daikon radish and kabocha squash.
tasty!

Typical meal 2



depends on the condition, both internal (physical), and external (season, weather),i adjust what kinds of vegetables or cooking methods i use.
since it was rather warm last few days, i added some lighter dish like seaweed salad in the meal.
fun to make a plan for the dinner, feeling more connected to my own body and environment.

this is my typical everyday meal.
whole grains, vegetable miso soup, greens, bean/vegetable dish.
usually about 10 servings of vegetables, different cooing style to make it more fun, and balanced.

New pressure cooker



After almost two years of use, my old pressure cooker no longer functions....
so I invested in a better one.
and this was the first night that I used it.
wow, what a difference!!
brown rice tastes fabulous!!

Lotus root



there are many ways to cook this strange shaped vegetable called lotus root.
supposed to help, and nourish lung /respiratory functions.

this time, I made this lotus root stew with apple-miso sauce.
delicious!

Cod risotto



Somebody told me that cod oil has some vitamin D.
Especially in winter, I need to pay attention to getting enough of it.
so I made risotto with wild cod.
this is just soooooooo good!!

Deep fries




Who doesn't like deep fried food?
I sometimes make it, too!

Fu, wheat gluten food, with apple miso sauce, which tastes like a pork chop.
And fried Japanese sweet potatoes.

Chick pea!





When I cook beans, I make extra so I can store them and later use for different dishes.
here are 3 different dishes with chick pea.

sauted with bok choy.
salad with celery and arame seaweed with ume dresssing
clear broth thickened with kuzu root

Kabocha!


I got a great organic kabocha squash at a local farmer's market!
squash can be tricky.
sometimes it's watery, and sometimes dense and sweet.
hard to tell until you cut in half, and cook.

but this one was so dense, sweet and almost like a chestnut!
so I made a simple stew with daikon radish.
not much seasoning, just a pinch of sea salt,which enhances the flavor of both veggies.

Chickpea croquette!



cook extra beans, so you can use them for variety of dishes later.
and this chick pea croquette was a big hit!
so creamy, and delicious : )
no need for sauce!

Tofu steak




I don't use much tofu, but when I do, one pack is just too big!
so i have to eat it almost everyday.
yesterday was gammodoki, then today tofu steak.
both are good, though : )
using leftover clear broth, made another veggie-kuzu gravy sauce for the steak.

mixed tofu, hijiki seaweed, scallions and grated mountain yam to make balls, then deep fry with oil.
the sauce is kuzu gravy dashi.

delicious!
