Kabocha!
I got a great organic kabocha squash at a local farmer's market!
squash can be tricky.
sometimes it's watery, and sometimes dense and sweet.
hard to tell until you cut in half, and cook.
but this one was so dense, sweet and almost like a chestnut!
so I made a simple stew with daikon radish.
not much seasoning, just a pinch of sea salt, which enhances the flavor of both veggies.
