sunchoke dish 2



you can use raw in salad, too.
but to make it more digestible, i made pressed salad with cabbage.

cut sunchoke match stick
shred cabbage
mix and kneed with seasalt
press at least 30minutes
squeeze out excess water
add a dash of ume vinegar and brown rice vinegar, then mix

refreshing and yummy!
